Gingerbread Tiramisu

Christmas is around the corner and this Gingerbread Tiramisu would be perfect as your dessert.
The mascarpone and cream filling has been delicately spiced with some vanilla and chai. This pillowy and creamy filling is sandwiched between gingerbread biscuits that have been dunked in some boozy dirty chai.
It’s rich, decadent and celebrates the Christmas flavours masterfully.

1. Ingredients
You will see some duplicates, like sugar and chai powder, but different measurements are used for different purposes so make sure you read the recipe carefully. Remember, the mascarpone cream needs to be at room temperature, simply leave it on the counter for a few hours before baking. I used Arkadia Chai Powder I got from Coles, but anything similar would do.
2. Equipment
I used 4 stemless wine glasses for the dessert. You also need a large mixing bowl, a heat proof bowl or measuring jug, some spatulas and a 1cm (0.4in) round piping tip and piping bag.
3. When whipping cream
You need to make sure cream is very cold before whipping. There’s a difference between heavy cream and whipping cream, and I recommend that you use heavy cream for a more stable and pillowy texture. You can even chill your equipment you’ll use like your bowl and electric beater for a lighter cream mixture.

5. Decorating before serving
Cocoa powder tends to change to a darker colour after you dust it. After the tiramisu comes out of the fridge, lightly dust cocoa powder over the tiramisu with a sieve and place one coffee bean on top.
Prepare a strong cup of espresso, 300ml in volume, then stir in the rum, chai powder, and white sugar. Let cool for around 20 minutes before using. (I put mine in the fridge to cool quickly).
Beat the mascarpone, cream, caster sugar, chai powder, and vanilla essence using a stand mixer or electric beater. Beat at a medium speed until medium peaks form. Set aside.
Get 4 stemless wine glasses. Prepare a pastry bag (piping bag) and put in a round (1cm, 0.4in) piping tip. Fill the pastry bag with the mascarpone mixture. Pipe around 2cm worth of cream to the bottom of the wine glasses. Dip two gingerbread biscuits in the dirty chai mixture very briefly and then place it on top of the cream in all the glasses. Pipe another 2 cm worth of cream on top of the soaked biscuits. Pipe round dots on the top of the biscuit layer. (see picture). Cover with cling wrap and place in the fridge for around 2 hours, best overnight.
Dust with cocoa powder using a small sieve just before serving and place a coffee bean on top of each tiramisu. Keep covered in the fridge and consume within 3-4 days.
