These No Bake Apricot Muesli Bars are the perfect snack to take to work or school. They’re full of nutritious goodies and take around 15 minutes to make. 

I enjoyed the texture, particularly the chewiness, of the bar because of the different ingredients like dried apricots and Rice Krispies inside. Also, I appreciate the mellow buttery flavour that enhances the complex sweetness coming from coconut sugar and honey.

1. Ingredients

Coconut sugar is now available at many supermarkets. If you can’t find some, I would recommend visiting your nearest bulk food store. Alternatively, you can replace it with some soft brown sugar instead. I used desiccated coconut, but feel free to use shredded coconut for added texture. 

2. Equipment

I used a rectangular baking tray (20cmx30cm/8x12inch) lined with baking paper. You also need a saucepan, a large mixing bowl and a spatula. 

3. Adjust the sweetness

This muesli bar can be on the sweet side. I would recommend decreasing the coconut sugar amount a little if you prefer something not sweet. You still need to add sugar and honey so that the bar can form its muesli bar shape and not break apart.

4. Change the ingredients

Feel free to mix up and substitute the ingredients. Instead of pepita, you could add some almonds, cashew or peanuts. There’s such a big range of dried fruit you can use. You could also add some chocolate chips instead of dried apricots. Instead of chia, I think some sesame seeds or linseed could work well. Also, instead of using butter, you could use some virgin coconut oil to make it a vegan recipe.

 113 g unsalted butter (1/2 cup)
 85 g coconut sugar (1/2 cup)
 113 g honey (1/3 cup)
 60 g pepitas (1/2 cup)
 95 g dried apricots, diced small (1/2 cup)
 48 g shredded or desiccated coconut (1/2 cup)
 36 g chia seed (1/4 cup)
 140 g rolled oats (1 1/2 cups)
 25 g Rice Krispies (1 cup)

Line a 20x30cm (8x12in) baking tin with baking paper.

Heat up the butter, coconut sugar and honey in a small saucepan at low heat until it reaches a slow boil and the sugar/butter have melted. Make sure to stir continuously.

Place the remaining dry ingredients into a large mixing bowl. Add the heated butter mixture to the dry ingredients and mix well so that the ingredients are well dispersed and coated evenly with the butter mixture.

Place the muesli mixture into the prepared tin and press down evenly using a spatula. It works well to put baking paper on the muesli mixture and press down using your fingers. The muesli mixture needs to be pressed down well so a solid bar can form. Place in the fridge for at least an hour.

Gently remove from the tin and cut into 12-14 even slices. Place in an airtight container at room temperature for up to 3 days and in the fridge for up to a week.
